A smoke box is very common for a gas bbq.   Smoke boxes use convection to draw hot smoke past meat, very slowly cooking it.  You can add artificial smoke flavor to the wood chips in the smoke boxes to give the meat a little bit more flavor.  When smoking while slow cooking, sometimes gas barbeque grills are preferred due to the fact that they dry out food a little less than their charcoal or wood counterparts.  This process is the most wide known usage of the term “barbecue” in the U.S.; however some enthusiasts consider this a completely different cooking technique called hot smoking.

Gas bbq grills are more expensive than charcoal or wood grills due to their extra parts.  The longevity of a gas bbq grill may be extended more by being able to be repaired.  Sometimes with charcoal or wood grills it is just easier, or cheaper, to purchase an entirely brand new grill.  Sometimes this is a little less convenient.   Natural gas grills are also a considered cleaner than charcoal or wood.  There is no ash cleanup involved, just shut it off and you’re done.  Air pollution is also less of a factor with gas than charcoal, although this is a minor point for most people.  Due to the above few reasons, most commercial restaurants or heavy duty cookers are running with gas barbeque grills to supply their needs.

Gas barbecues may not have the classic feel, or even taste, of what you have come to expect as “barbecue”, but they are still a contender in the market and many people prefer their taste over wood and charcoal.
