Grilling is a great outdoor cooking activity that gives food a flavor that can be hard to replicate. Most grilling is done on an outdoor grill, but there are many different types depending on your tastes. Loosely defined, grilling is usually a form of outdoor cooking that has dry heat cooking the surface of the food. If you’re using a griddle, the heat transfer is by direct conduction. If you’re not using a griddle, heat transfers to food via thermal radiation. Any grilling with the heat coming from above the food is termed as broiling in the US and Canada.
Gridiron Grilling
This is probably what you think of when you think about grilling on outdoor grills. Charcoal, outdoor electric grills, or outdoor gas grills are the most common, however there are other types as well. Usually the heat source is under the gridiron with the meat placed on top. This is also often referred to as an outdoor bbq grill even though traditional barbecuing is cooked by smoke and indirect heat. Here is a review of the most traditional type of outdoor cooking:

If you’re looking to braise meats or vegetables, you will find that outdoor cooking grills handle it well. An outdoor electric grill or a gas grill would be your best bet for this type of grilling. This process involves putting a covered pot on top of the grill and letting it simmer for some time. This allows you to brown the meat before braising, and also to glaze with sauce on the normal grill after going through the braise process. The results of this are quite similar to classic bbqing but are faster than smoking your bbq in a pit. Here is a recommended dutch oven to cover your needs:
